Until this point I have only had moderate cooking skills, but I felt it was time to stop short-changing myself and make genuine meals. One of the pleasant surprises I\u2019ve had since I started cooking was that it is far easier to eat healthy foods if you know how to cook.<\/p>\n<p>Cooking is a dying art, because it takes too much time and convenience foods are cheap and tasty. Until recently, I\u2019d always seen great cooking as simply being a luxury. If you want to eat tasty foods, you need to cook. Unfortunately, when you\u2019re busy, taste is less important than speed.<\/p>\n<p>Now that I\u2019ve started improving my cooking skills, I\u2019ve started to see how better cooking can lead to healthier eating.<\/p>\n<h2>Making Healthy Food Tasty<\/h2>\n<p>Junk food tastes good. Back when humans were eating mammoths and food was scarce, the body had different priorities. Fat and calories were harder to find than vegetables and fiber, so that\u2019s why french fries and donuts taste better than broccoli.<\/p>\n<p>My goal of learning to cook is to find ways to cook healthy foods to make them taste better. If healthy foods are bland and dry, they will be overpowered by the junk food McDonalds spends millions of dollars to taste perfect.<\/p>\n<h2>Who Here Likes Tofu?<\/h2>\n<p>I\u2019ve met very few people who genuinely like tofu. I\u2019ve met a lot more people that won\u2019t touch the stuff. While a healthy diet doesn\u2019t need to include the white blocks, it\u2019s a perfect example of a healthy food that most people can\u2019t stand.<\/p>\n<p>My adventures with cooking started with the challenge of finding a way to cook the stuff. As some of you know, I don\u2019t eat meat, so tofu is an excellent source of protein and calcium. I must have cooked a dozen different recipes before I started finding ways that worked. Now I actually like tofu and I know many recipes where it will taste good.<\/p>\n<p>My goal isn\u2019t to get you to eat tofu. Instead, I want to suggest that if you want to eat healthier, learn how to cook. The taste factor for many otherwise bland, healthy foods can double or triple depending on your culinary skills.<\/p>\n<h2>An Argument for Cooking<\/h2>\n<p>I\u2019m not a chef and I\u2019m not a nutritionist. But as there are none so pious as the newly converted, I thought I\u2019d share my reasons for improving my cooking skills:<\/p>\n<h3>1) Eat Real Food<\/h3>\n<p>\u201cHealthy\u201d convenience foods are growing in popularity. While these quick, veggie filled dishes might claim to be the perfect solution for the busy lifestyle, I have my doubts. According to nutritionist, <strong><a href=\"http:\/\/www.amazon.com\/gp\/redirect.html?ie=UTF8&amp;location=http%3A%2F%2Fwww.amazon.com%2FChina-Study-Comprehensive-Nutrition-Implications%2Fdp%2F1932100385%3Fie%3DUTF8%26s%3Dbooks%26qid%3D1210779835%26sr%3D8-1&amp;tag=scottcom-20&amp;linkCode=ur2&amp;camp=1789&amp;creative=9325\">T. Colin Campbell,<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: medium none  ! important; margin: 0px ! important;\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=scottcom-20&amp;l=ur2&amp;o=1\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/><\/strong> nutrition has an incredibly complex chemistry, so you can\u2019t just measure your vitamins as a way of determining how healthy your diet is.<\/p>\n<p>Michael Pollan, author of <strong><a href=\"http:\/\/www.amazon.com\/gp\/redirect.html?ie=UTF8&amp;location=http%3A%2F%2Fwww.amazon.com%2FOmnivores-Dilemma-Natural-History-Meals%2Fdp%2F0143038583%3Fie%3DUTF8%26s%3Dbooks%26qid%3D1210779990%26sr%3D1-1&amp;tag=scottcom-20&amp;linkCode=ur2&amp;camp=1789&amp;creative=9325\">The Omnivore&#8217;s Dilemma<\/a><\/strong><img loading=\"lazy\" decoding=\"async\" style=\"border: medium none  ! important; margin: 0px ! important;\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=scottcom-20&amp;l=ur2&amp;o=1\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/>, argues that we shouldn\u2019t eat food our grandmother\u2019s wouldn\u2019t recognize. Fewer ingredients, simpler foods and more whole grains. Learning to cook is the only way you can get real food.<\/p>\n<h3>2) Great Cooking Doesn\u2019t Take More Time than Bad Cooking<\/h3>\n<p>Putting on a four course meal will take you several hours. But if you\u2019re creative, you can drastically cut down on preparation time without lowering quality. Buy a rice cooker and you can have brown rice or quinoa ready with only a few minutes of preparation as the cooker will turn itself off when you\u2019re ready.<\/p>\n<h3>3) Don\u2019t Fight Your Tastebuds<\/h3>\n<p>In a war against your gustational senses, you\u2019re probably going to lose. Don\u2019t use willpower and don\u2019t fight the inevitable.
