has our historically diverse diet gone down to mostly three crops: corn, wheat and soybeans?\u00c2\u00a0 Michael Pollan argues that in a society where potato chips and corn oil can be awarded health claims (Frito Lays and Mazola, respectively), there is something seriously wrong with our approach to food.<\/p>\n<p>I recently had a chance to read <strong><a href=\"http:\/\/www.amazon.com\/gp\/redirect.html?ie=UTF8&amp;location=http%3A%2F%2Fwww.amazon.com%2FOmnivores-Dilemma-Natural-History-Meals%2Fdp%2F0143038583%3Fie%3DUTF8%26s%3Dbooks%26qid%3D1218473205%26sr%3D8-1&amp;tag=scottcom-20&amp;linkCode=ur2&amp;camp=1789&amp;creative=9325\">The Omnivore&#8217;s Dilemma<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: medium none  ! important; margin: 0px ! important;\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=scottcom-20&amp;l=ur2&amp;o=1\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/><\/strong> and <strong><a href=\"http:\/\/www.amazon.com\/gp\/redirect.html?ie=UTF8&amp;location=http%3A%2F%2Fwww.amazon.com%2FDefense-Food-Eaters-Manifesto%2Fdp%2F1594201455%3Fie%3DUTF8%26s%3Dbooks%26qid%3D1218473205%26sr%3D8-2&amp;tag=scottcom-20&amp;linkCode=ur2&amp;camp=1789&amp;creative=9325\">In Defense of Food<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: medium none  ! important; margin: 0px ! important;\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=scottcom-20&amp;l=ur2&amp;o=1\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/><\/strong>.\u00c2\u00a0 I think both books are must-reads for anyone that is interested in their health, the environment or eating food.<\/p>\n<h2>Why is Health Advice Making us Sicker?<\/h2>\n<p><em>In Defense of Food<\/em> starts on an unusual attack.\u00c2\u00a0 Pollan argues that a big part of the obesity crisis is the field of nutrition itself.\u00c2\u00a0 Nutrition has shifted the focus from foods, like potatoes and beef, to nutrients, like carbohydrates and saturated fat.\u00c2\u00a0 This switch from foods to nutrients is what Pollan calls nutritionism and it is making us sick.<\/p>\n<p>This focus on nutrients and not food, has lead to an oversimplification of an incredibly complex system.\u00c2\u00a0 When protein, fat and carbohydrates were discovered as the building blocks of nutrition, many researchers declared the problem of nutrition solved.\u00c2\u00a0 Unfortunately, they weren\u2019t able to explain why sailors (who get plenty of these macronutrients) were getting sick.\u00c2\u00a0 This lead to the discovery of vitamins and minerals.<\/p>\n<p>Now we\u2019re just learning that vitamins aren\u2019t the last step.\u00c2\u00a0 Other compounds in food such as flavonols can impact our health.\u00c2\u00a0 The simple category of fats has undergone more than a few civil wars, splitting first into saturated and unsaturated, and now dividing into even more categories such as Omega-3&#8217;s and trans-fats.\u00c2\u00a0 Although knowledge is progressing, nutritional science understands a lot less than it would like us to believe.<\/p>\n<p>Food corporations love nutritionism.\u00c2\u00a0 Need more Vitamin A?\u00c2\u00a0 Just add it in.\u00c2\u00a0 Trans fats are bad?\u00c2\u00a0 Just synthesize something else.\u00c2\u00a0 Tomatoes and brown rice don\u2019t have much of a profit margin.\u00c2\u00a0 Absorbing the health advice, industry has created many edible foodlike substances that claim to be healthier than real food, and also make far more money.<\/p>\n<p>Scientific arrogance and industrial greed have joined to make us obese, pollute our earth and \u201cruin more than a few good meals\u201d according to Pollan.<\/p>\n<h2><span style=\"font-weight: bold;\">\u00c2\u00a0 \u00c2\u00a0\u00c2\u00a0<\/span>Eat Food.\u00c2\u00a0 Not Too Much.\u00c2\u00a0 Mostly Plants.<\/h2>\n<p>Seven words summarizes Pollan\u2019s advice for the eater.\u00c2\u00a0 Along with the simple headings, he offers advice I never expected to hear from a book on nutrition, such as:<\/p>\n<ul>\n<li>\u00c2\u00a0\u00c2\u00a0\u00c2\u00a0 \u201cDon\u2019t eat foods your great-grandmother wouldn\u2019t recognize.\u201d<\/li>\n<li>\u00c2\u00a0\u00c2\u00a0\u00c2\u00a0 \u201cBe the kind of person who buys multivitamins.\u00c2\u00a0 Then save your money.\u201d (Studies have shown that people who take vitamins tend to be healthier, but the actual vitamins themselves are probably worthless.)<\/li>\n<li>\u00c2\u00a0\u00c2\u00a0\u00c2\u00a0 \u201cAvoid food products that make health claims.\u201d (Ever seen a list of ingredients on an apple?)<\/li>\n<li>\u00c2\u00a0\u00c2\u00a0\u00c2\u00a0 \u201cAvoid food products containing ingredients that are A) unfamiliar, B) unpronounceable, C) more than five in number, or that include D) high-fructose corn syrup.\u201d<\/li>\n<\/ul>\n<p>What little we do know about nutrition, we know that the Western diet isn\u2019t healthy.\u00c2\u00a0 Processed foods, too much meat, industrial agriculture and high-fructose corn syrup are a big part of the problem.<\/p>\n<h2><span style=\"font-weight: bold;\">\u00c2\u00a0 <\/span>What I Learned From These Books<\/h2>\n<p>Reading is useless unless you\u2019re going to do something about it.\u00c2\u00a0 There were multiple lessons I gathered from these two books that I\u2019m going to use to change the way I eat.\u00c2\u00a0 I definitely don\u2019t fit into a typical Western diet (I\u2019m a vegetarian and there is tofu in my fridge), but that doesn\u2019t mean I couldn\u2019t find a few points of improvement.<\/p>\n<p>Here are a few of the changes I\u2019d like to make after reading these two books:<\/p>\n<h3><span style=\"font-weight: bold;\">\u00c2\u00a0 <\/span>1) Eliminating Processed Foods<\/h3>\n<p>A big villain in both of Pollan\u2019s books is processed foodlike substances.\u00c2\u00a0 As a culture we\u2019ve shifted away from the whole foods of our ancestors.\u00c2\u00a0 Food is more than it\u2019s nutrient building blocks (at least in the ones we\u2019ve discovered), and when you refine foods they may retain some of those building blocks and completely lose others.<\/p>\n<p>I don\u2019t eat much processed foods.\u00c2\u00a0 When I have my way, a good lunch is brown rice and stir fried tofu and broccoli.\u00c2\u00a0 But, like most people, I\u2019ve taken the shortcut provided by more processed foods.\u00c2\u00a0 As a vegetarian, a whole host of meat imitation products have been created.\u00c2\u00a0 Initially I ate some of these out of convenience and, supposedly, my health.\u00c2\u00a0 After reading these two books I\u2019m going to reconsider how these processed foods play a role in my diet.<\/p>\n<p>Eliminating all highly processed foods is difficult, if not impossible.\u00c2\u00a0 Where do you draw the line?\u00c2\u00a0 Bread is a processed food, but it has stood for hundreds of years whereas milk-free cheese has not.\u00c2\u00a0 But that doesn\u2019t mean you can\u2019t take some steps to reduce it\u2019s impact on your diet.<\/p>\n<h3><span style=\"font-weight: bold;\">\u00c2\u00a0\u00c2\u00a0\u00c2\u00a0 <\/span>2) Eating Organic<\/h3>\n<p>Pollan criticizes what he sees as \u201cindustrial organic\u201d food.\u00c2\u00a0 Despite this critique, both of these books opened me up more to the idea of trying to eat more organic foods.\u00c2\u00a0 Pollan claims that many of the big organic growers still utilize the big industrial structure for delivering food.\u00c2\u00a0 As a result, organic livestock isn\u2019t much better than industrial livestock, and your lettuce is grown in a huge industrial system, instead of a quaint farm.<\/p>\n<p>Although these criticisms are fair, I think if you compare organic to industrial food it still wins on the areas of the environment, health and ethics.\u00c2\u00a0 I\u2019m not sure whether a complete switch to organic is something I\u2019m going to do, but paying a bit more for foods that are probably healthier and less environmentally damaging is probably a good thing.<\/p>\n<h3>3) Cooking More Meals<\/h3>\n<p>Earlier this year I posted about how I\u2019m learning to cook more.\u00c2\u00a0 These books offered another potent argument for home-cooked meals: they are much healthier for you.\u00c2\u00a0 By cooking food and taking time to prepare food that tastes good, I\u2019ll know I\u2019m not eating a highly-processed food substitute.<\/p>\n<p>Cooking also broadens the amount of species you eat.\u00c2\u00a0 Highly processed food is usually the result of corn or soybeans.\u00c2\u00a0 When you cook real food you eat a much more varied diet, which as an omnivore, is closest to the diet we would eat naturally.<\/p>\n<p>I don\u2019t think I\u2019ll be doing any of these steps as a 30 Day Trial yet.\u00c2\u00a0 I\u2019m moving back to residence in a few weeks where my flexibility with food is more restricted.\u00c2\u00a0 But, when I go back to cooking every meal for myself, completely eliminating processed foods and spending more time cooking will be on my to-do list.<\/p>\n<p>I\u2019ve written just a bit about these two books, but I recommend reading both of them.\u00c2\u00a0 <strong><a href=\"http:\/\/www.amazon.com\/gp\/redirect.html?ie=UTF8&amp;location=http%3A%2F%2Fwww.amazon.com%2FDefense-Food-Eaters-Manifesto%2Fdp%2F1594201455%3Fie%3DUTF8%26s%3Dbooks%26qid%3D1218473205%26sr%3D8-2&amp;tag=scottcom-20&amp;linkCode=ur2&amp;camp=1789&amp;creative=9325\">In Defense of Food<\/a><\/strong> focuses on the nutrition, while <strong><a href=\"http:\/\/www.amazon.com\/gp\/redirect.html?ie=UTF8&amp;location=http%3A%2F%2Fwww.amazon.com%2FOmnivores-Dilemma-Natural-History-Meals%2Fdp%2F0143038583%3Fie%3DUTF8%26s%3Dbooks%26qid%3D1218473205%26sr%3D8-1&amp;tag=scottcom-20&amp;linkCode=ur2&amp;camp=1789&amp;creative=9325\">The Omnivore&#8217;s Dilemma<\/a><\/strong> is a critique of the agricultural and food industry in general.\u00c2\u00a0 I\u2019d recommend reading <em>In Defense of Food<\/em>, but if you have the time, reading both will give you a better picture of where your food comes from and why you might want to reconsider how you eat.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>How can a nation so
